Candy Cane Cookies

Fa la la la la its Christmas Eve!! 1 sleep and the man in the red suit will be here. There is last minute shopping, wrapping and baking happening in our house today... Who doesnt love Christmas baking and we have made some candy cane cookies ready to leave for Father Christmas. These cookies are simple to make and sweet to taste. The best part of these cookies is the softness of the cookie mixed with the crunch of the candy canes and of course there is the peppermint flavouring.

Prep time: 10 Minutes Cook time: I0 Minutes Makes: 12 Cookies
Ingredients
250g of Plain flour sieved
175g of Softened butter
80g of Caster sugar
5 Candy canes - crushed
2 tbsp of Granulated sugar
1tsp of Vanilla extract
1tsp of Peppermint extract
Equipment
1 Mixing bowls
Spatula
Rolling pin
Cookie cutter
2 Baking trays
Greaseproof paper
Method
Preheat the oven for 180C.
Grease the baking trays and line with greaseproof paper.
In the mixing bowl sieve the flour and add the caster sugar. Mix together with the spatula to combine the ingredients.
Add the softened butter and using your hands begin to rub the ingredients together with finger tips to which it will turn to breadcrumbs then a dough.
Sprinkle some flour onto your work surface and the rolling pin and roll the dough to 2 cm thick and begin to cut out the cookies with the cookie cutter until all the dough is used.
Lay the cookies giving space between them on the baking tray. Sprinkle each cookie with the granulated sugar and place in the oven to bake for 8 minutes.
Take the cookies out of the oven and sprinkle the crushed candy canes on the top of each cookie and bake for a further 2 minutes until the cookies are slightly golden.
Once baked leave the cookies to completely cool.
Serve when ready.
