Orange Cheesecake Recipe

A cheesecake never fails to impress and there are so many ways you can put a twist on the classic vanilla cheesecake.
With the summer sun as inspiration l have chosen to make something dreamy and have gone for the citrus flavour of Orange for a refreshing taste.
The boys are on their summer holidays and they have been helping in the kitchen baking and together we made this orange cheesecake. The kitchen smelt divine with the aroma of orange zest which added to the feelings of summer vibes.
This orange cheesecake is bursting with flavour and texture from the ginger biscuits, orange and cream and makes the perfect evening pudding to enjoy in the sun.
Baking for a gathering, party or just a treat, this recipe will get you compliments, (even my mother in law complimented me).

Prep time: 40 Minutes Cook time: 4 hours/overnight Makes: 9 slices
For the biscuit base:
200g of Digestive biscuits - crushed
100g of Ginger Snaps - crushed
150g of Butter - melted
For the cheesecake filling:
400g of Philadelphia cream cheese
250ml of Double cream
80g of Icing Sugar
1/2 tsp of Vanilla extract
4 Oranges (juiced, zested and cut into segments)
Juice from the oranges
For the topping:
Zest and the orange segments scattered across
Equipment
2 Mixing bowls
Spatula
Electric whisk
8’ cake tin
Fork
Greaseproof paper
Instructions:
Grease the cake tin and line just the bottom with greaseproof paper.
Begin with making the biscuit base by combining the butter and digestive biscuits together in the mixing bowl with the fork. When the butter is soaked up by the biscuits pour the biscuit crumb into the cake tin spreading it evenly around the tin and pressing the base down firmly with the fork. Place in the fridge while you begin to make the cheesecake filling.
In the other mixing bowl place the Philadelphia, icing sugar, vanilla extract along with the orange juice and half the zest. Begin to whisk together on a low setting to combine the ingredients.
When the ingredients begin to combine begin to slowly pour in the cream and set the whisk to a higher setting until the filling becomes a pale yellow in colour. Use the spatula and scrape around the mixing bowl to ensure all the ingredients are combined.
Begin to pour the cheesecake filling over the biscuit crumb, which should of hardened in the fridge, using the spatula spread the mixture evenly and place in the fridge overnight or for 6 hours to set.
Before serving, place some of the orange segments and sprinkle over some of the zest around the edge of the cheesecake.
