It’s BBQ week here in the UK and if the rain holds off we will be BBQing later today. I am currently in the kitchen making lots of side dishes to be enjoyed by our guests as are we are hosting a birthday party here today and l will have plenty of mouths to feed.
Whenever we host l will always go buffet style as this is the most easiest way to cater for many people and various food preferences.
So I wanted to share this simple side dish l love to make, pineapple salsa. The recipe is so easy to follow and it is made within 10 minutes ready to place on the table and so is usually the last thing l make.
It is fruity, juicy and refreshing and the perfect cool down on a hot day. As some children eat this l take the seeds out of the chilli.
If you have any left over save it for another day to have in a tortilla wrap or with tacos, its delicious.

Ingredients
3 Mint leaves finely chopped.
1 Pineapple cut into chunks
1 Lime - juiced
1/2 Red Chilli - finely diced. Consider if you want the seeds in or out.
1/2 Red onion - peeled and finely chopped
1/2 Tomato - cut into small chunks
Fresh parsley rough ripped
Equipment
1 Mixing bowl
Wooden spoon
Serving spoon
Cling film
Method
In the mixing bowl place the mint, parsley (leaving some for garnish) and lime juice and roughly stir together with the wooden spoon.
Add the red onion to the juice and leave a few minutes before adding the tomato.
Place the pineapple and tomato into the mixing bowl along with the chilli. Stir everything together with the wooden spoon before covering with cling film and placing in the fridge until ready to serve.
Before serving sprinkle the remaining parsley on top.
