Easter may be over but Spring is still here... With so much chocolate left over from the Easter Bunny in our house we took action to use up some of the chocolate to make some yummy things and this Mini Egg Cookie Pie was our first bake.

If you are looking for a sweet treat then this mini egg cookie pie is a must for you to make and devour. I actually could not eat my whole slice because it was so sweet, yet the boys managed to consume all of theirs.

This recipe is simple to follow and within 40 minutes it will be ready to enjoy. Have a go at making today and let us know what you think.. Enjoy!.

Mini Egg Cookie Pie

Prep time: 10  Minutes             Cook time:   25 minutes          Makes:  1 Large Cookie Pie


Ingredients


300g of Plain flour

200g of Butter- room temperature

200g of Chocolate Chips

100g of Granulated sugar

100g of Light brown sugar

2 pkts of Mini eggs

1 Egg

1 tsp of Vanilla extract

1 tsp of Salt

1 tsp of Bicarbonate of soda


Equipment


Mixing bowl

Wooden spoon

Spatula

9inch cake tin

Greaseproof paper

Rolling pin

Kitchen foil


Method


  1. Preheat the oven to 160C.


  1. Grease the cake tin with butter and line the bottom with greaseproof paper.


  1. In the mixing bowl place the butter and sugars and mix them together with the wooden spoon.


  2. Add the egg, vanilla extract to the butter and sugar, continue to mix together until the ingredients are combined.

  1. When combined put in the flour and bicarbonate of soda. A dough should now begin to form.


  1. With one packet of mini eggs begin to bash them with the rolling pin to crumble them up and pour them into the dough mixture along with the chocolate chips. (Leave some chocolate chips for the top)


  1. Pour half the contents of the other bag of mini eggs into the mixture and mix everything together.


  1. Place the dough into the cake tin and gently push the dough down so it is even in the cake tin. Cover the cake tin with the foil to prevent burning the top pf the cookie pie.


  1. Place the dough in the oven to bake for 30 minutes. Take the foil off for the last 5 minutes to encourage browning.


  1. Check the cookie pie is baked by using a skewer and gently jiggle the cake tin. If there is a lot of movement and the top is spongy then allow an extra 5 minutes.


  1. Leave the pie to cool completely to which it will also harden.


  1. Serve when required for a sweet treat.
